There’s a big holiday weekend coming in the United States, and I’m guessing that most people are anxious to finally get back together with family and friends. And if you’re looking for a fun, delicious, and low-carb appetizer that’s going to be perfect for any get-together or special meal, you can’t go wrong with these amazing Air Fryer Artichoke Hearts! I’m excited to share this new recipe, and I promise that everyone who likes artichoke hearts will love this easy idea!

And making roasted artichoke hearts for an appetizer or side dish couldn’t be easier with the Air Fryer! These low-carb artichoke hearts are simply coated with olive oil, seasoned, and then roasted in the Air Fryer and topped with coarsely grated Parmesan cheese. You can eat them dipped into something tasty if you like, but truthfully they don’t need a dip to taste great. Of course, I love artichokes so I’d love this as a side dish for a special dinner too. We used two cans of whole artichoke hearts to make 8 appetizer servings or 4 side dish servings, but you can definitely cut the recipe in half if you don’t want to make that much.

What ingredients do you need for this recipe?

Which Air Fryer do I use?

I became a big Air Fryer fan after I discovered the Cuisinart Convection Air Fryer Toaster Oven (affiliate link) which is what I used for this recipe. This air fryer has a larger basket, which was big enough to do two cans of whole artichoke hearts but if your Air Fryer has a smaller basket you might need to cut the recipe in half. I find this model very easy to use. I also like the convenience of having an air fryer that stays out on the counter. (You can Use Air Fryer Recipes to see the other Air Fryer recipes on my site.)

What if you don’t have an Air Fryer?

I haven’t tried making these roasted Artichoke Hearts in a regular oven, but if you try it I would cook them at 450F/230C. The Air Fryer cooks hotter like a convection oven, so I’m guessing the cooking time would be similar but I’d start to check after about 6 minutes. (If anyone tries them in the oven, please report back and tell us how you did it!)

How to Make This Recipe:

  1. Set at 390F/200C and start to heat (if your Air Fryer needs it).
  2. Drain artichoke hearts into a colander placed in the sink.
  3. Cut artichoke hearts in half, and put them in a bowl.
  4. Drizzle the Artichokes with olive oil and seasonings.
  5. Toss gently until artichoke hearts are well-coated with oil and spices.
  6. Arrange artichoke hearts in your Air Fryer basket, cut side facing up. (If you don’t have a large basket like I do, you might only be able to cook one can at a time.)
  7. We cooked them exactly 10 minutes, but I would recommend starting to check after about 6 or 7 minutes, especially if you have a different model of Air Fryer.
  8. When the artichoke hearts are done, arrange on a serving dish and sprinkle with coarsely-grated Parmesan.
  9. Serve hot and enjoy, with something to dip them into if desired.

What dips would be good with this?

You couldn’t go wrong with a classic like Grandma Denny’s Homemade Ranch Dip or the World’s Best Tzatziki Sauce as a dip for these. Some other options are Greek Yogurt Dip, Greek Yogurt Ranch Dip, Roasted Red Pepper Dip with Feta, Roasted Red Pepper and Garlic Aioli Sauce, or Spicy Dipping Sauce with Sriracha. I also think they’d be good with some salad dressings served as a dip like Basil Vinaigrette, Cafe Rio Salad Dressing, or Green Goddess Salad Dressing.

Ingredients

  • two 14 oz. cans whole artichoke hearts, packed in water
  • 2 T olive oil
  • 1 tsp. Italian Herb Seasoning
  • 1/2 tsp. salt (more or less to taste)
  • 1/4 tsp. freshly-ground black pepper (more or less to taste)
  • 2 T coarsely-grated Parmesan Cheese (or more)

Instructions

  1. If your Air Fryer needs to be preheated, set at 390F/200C and start to heat.
  2. Drain artichoke hearts well in a colander placed in the sink.
  3. Cut artichoke hearts in half.
  4. Put artichoke hearts in a bowl and drizzle with olive oil and seasonings.
  5. Toss gently with a spoon until the artichoke hearts are completely coated with oil and spices.
  6. Arrange artichoke hearts in the Air Fryer basket, cut side facing up.
  7. We cooked them exactly 10 minutes, for slightly crisp and well-browned edges, but every Air Fryer is different so I would recommend starting to check after about 6 or 7 minutes.
  8. When the artichoke hearts are done, arrange on a serving dish and sprinkle with coarsely-grated Parmesan
  9. Serve hot and enjoy, with something to dip them into if desired.
